Sugar Cookies for May Baskets

This is a great recipe if you need cookies quickly.  Instead of messing around with creaming butter and sugar, mixing the dry ingredients and then bringing out the cutting board and rolling pin, these sugar cookies go together in one bowl.  You end up with nice sized round cookies that get their personality from the frosting color and their taste from good old fashioned sugar!  As you can see, we wrapped them in saran wrap and tied each one with ribbon to give them to our neighbors and friends.

  • 1 cup margarine
  • 1 cup vegetable oil
  • 2 eggs
  • 1 cup powdered sugar
  • 1 cup white sugar
  • 1 tsp. cream of tartar
  • 1 tsp. salt
  • 1 tsp. baking soda
  • 4 cups flour
  • 1 tsp. vanilla 

 


Instructions:

1) Mix all ingredients together.

2) Roll dough into 1 ½” balls, drop on an ungreased cookie sheet and press with a glass that has been dampened and dipped in white sugar.

Don’t press too flat or the cookies will become thin and brittle.

 

 

 

 

 

3) Bake for about 8 minutes at 350 degrees.

4) When cool, frost with colored frosting.  This is our recipe.

2 cups powdered sugar
1 Tbsp. melted margarine
2 Tbsp. milk
1 tsp. vanilla
Food coloring

This made enough frosting for two colors.  I made the above recipe twice so we had four colors to play with!  For this particular batch, we used the neon food colors and they turned out bright and fun!
