Irish Soda Bread

I think this qualifies as one of those old family recipes that get handed down through the generations.  However, this one was handed down to me by a great lady named Mabel that I’ve known for years.  Mabel made this soda bread recipe for a church St. Patrick’s Day function and my husband loved it so much I asked her to share it with me.  That was nearly 10 years ago and this is the first time I’ve made it!  Hahaha, don’t tell Mabel!

Ingredients List:

  • 4 cups all purpose flour
  • 4 tsp. baking powder
  • ¼ cup sugar
  • 1 tsp. salt
  • 1 cup raisins (prefer golden)
  • 2 tsps. Caraway seeds
  • 1 1/2 cups buttermilk
  • ¼ tsp. soda
  • ½ to ¾ cup water

Instructions:

3) Add water gradually, stirring to form a soft dough.

4) Spoon into a greased 10 inch tube pan.  (I used a regular bread pan since I didn’t have a tube pan.)

5) Bake at 400 degrees for 55 minutes.  Yields 1 loaf.

6) Cool in pan on wire rack for 5 – 10 minutes then turn out onto wire rack to finish cooling.

I imagine you’ll want to know what my husband thought of my version of the Irish Soda Bread….well, the top crust was quite crunchy, (probably why the recipe calls for a tube pan)….so he started by crunching out loud and making faces like his teeth were breaking.  (He does that with everything I make.) However, as I left in a huff he called out, “I like it, I like it!”  I knew he meant it when I heard him in the kitchen cutting another slice!

This would be wonderful for the St. Patrick’s Day holiday, but don’t let this recipe sit in your recipe box for ten years like I did.  It’s fast and easy and tastes great!

Hi back at you! I'm so thrilled you are enjoying the recipes. Neither one of us would be considered even good in the kitchen, but that doesn't mean we don't have some tried and true recipes. And you know, often the best recipes come from friends, so consider us those friends and enjoy. By the way, I made this bread for the second time this week and I think my oven is a little hotter than it should be so I will have to cut down the baking time a bit. So just a heads up, don't let it get too dark on top or it will be dry. Let us know how you liked it!

Maith thú!
Baked this last night to go with my corned beef and cabbage. It was so easy to make, and tasted great. Everyone loved it. I plan to make this recipe more than once a year, for certain.
