When I was a kid, my grandmother made the best bean soup in the world! I know I'm bias, but it is true to me at least. In my adulthood, I have never been able to match her recipe, until I had a bowl of bean soup at Shari's house about 8 years ago during a Super Bowl, it was my Grandma's soup, and who do you think concocted this golden recipe!? No not Shari, her husband Bruce.
Well, I have been making it myself since then and it is easier than you can believe, in fact, my Grandmother must be chuckling to herself it is and was that simple. Good Ole Grandma!
Ingredients:
Instructions:
1) Open the beans and pour into a large pot, add two cans of water (more if you like a thinner broth). If using a jar of Randall Northern Beans, I fill the jar with water and add the a full jar.
2) Chop the celery and carrots into small pieces and add to pot.
3) Add the package of ham, draining the juice from the package. 4) Add onion if you desire - I have just started adding onions, so live wild!! 5) Add the bay leaves and a dash of salt and pepper, add more for taste later. 6) Cook slowly on a low heat (or in a crock pot) until all the good stuff starts to mingle. 7) Serve with a great loaf of bread or crackers and watch your favorite sport, movie and or sunset. I hope you enjoy this really simple but delicious soup, nothing says loving like soup!!!

I made Matt's Bean Soup last week. Served it with some Grands Buttermilk Biscuits. It was so easy and delicious! Very filling and warmed us up because it is so cold outside now. And, most important, my husband really loved it! I'll be making it often this Winter, and I emailed the recipe to some family and friends. Thanks for the great recipe!

So glad you enjoyed the bean soup! Winter is a perfect time for the warmth and rich flavors of soups and I jsut wnat to tell you that we have several more soup recipes to come. I've been working on a vegetable soup that has everything but the kitchen sink in it! It should almost be called veggie stew! And, it is wonderful. Thanks for the nice comments.
