A Cinco de Mayo Dinner

The fifth of May has become a day of celebration here in the United States mainly because of the influx of Hispanic people to the states.  Also, I think we Americans like any excuse to party!! 

The least we can do is understand what we are celebrating and then we’ll get to the recipes!  Many people believe that the 5th of May is Mexico’s Independence Day.  However, that is wrong, Independence Day is in September.  Cinco de Mayo is a celebration of the Mexican victory over the French at The Battle of Puebla in 1862.  There is an entire history lesson at http://www.mexonline.com/cinco-de-mayo.htm

But, of course for our purposes, it’s all about the Mexican food!  I’ve tried some new recipes since the last Cinco de Mayo article I put together so let’s take a look at what’s in store this year. 

Our menu will consist of:  Guacamole Dip, Salsa and Chips, Citrus Chicken, Lime Rice, Mexican Vegetables, and Cinnamon Stars for dessert.

Homemade guacamole and homemade salsa are a wonderful way to get the party started.  When I set out these two dips, my family can down two bags of blue corn chips before you say, “Ole”!

Here you see a plate full of luscious Citrus Chicken, Lime Rice and Mexican Vegetables. Colorful and tasty, this meal is filling as well as being healthy for you.  It isn’t spicy, but could be made so if you like.  The amount of the ingredients can be altered to get the level of spice you desire.  We kept it mild and enjoyed it all very much.

hese Cinnamon Stars are a perfect, light dessert, but they also make for a wonderful breakfast pasty with a cup of coffee!  Eat them while their warm for an extra nice treat.  They can also be paired with vanilla ice cream and caramel sauce!
