Cinco De Mayo Recipes

If by some unbelievable chance you aren’t aware what goes into Mexican dishes, you’ve either been living on a deserted island somewhere or you’re only a toddler because Mexican cuisine is everywhere!  Thank heaven, because it’s one of my favorite food groups!!

Mexican cuisine as we know it today was developed through centuries of food created by the Indian civilizations of the country, the Aztecs, Toltecs, Mayans and more.  The basics in their spreads include rich, hot and mild sauces made from chilies, stewed meats like pork, soups, rice and stews.  Of course we can’t forget tortillas and breads with plenty of cheeses.

Matt and I try out every Mexican restaurant within driving distance of our hotel in every city we visit.  It does make for some interesting gurgles during home show appearances but somehow we make it through!

The following recipes are out of cookbooks I have at home, or magazine clippings I’ve saved and they all sound so wonderful it’s hard to write them down without running to the kitchen to whip them up.

Why not start your celebration with Refried Bean Nachos!  This dish is full of everything you love about Mexican food, from beans and cheese to salsa and avocado.  It makes quite a large serving so plan on a big party!!

This next recipe is for a very tasty vegetable soup.  It has every veggie imaginable and by adding a little chili powder and some cumin you can turn a somewhat bland soup into something with some real kick!

 I make these Chicken Quesadillas all the time.  My kids love them and they go together so quickly they are perfect for those rushed dinners after all those school activities! read more

Another tasty Mexican main dish is Chicken Fajitas with all the fixin’s.  You can make these with steak or simply refried beans for a very filling nighttime meal!

We generally find it’s best to end a Mexican meal with something cool to tone down the heat from the salsa, chili powder and peppers.  Chocolate ice cream is often on a Mexican menu and that makes everyone in my family very happy.  We certainly don’t try to make it…we just scoop it and enjoy.  I hope you do too!
